Plantation and micro-beneficio
Admittedly it was pure chance which lead us to the finca of Don Martin Ureña in the Tarrazu region, but it was certainly a lucky chance. The plantation is located near to Santa Maria de Dota at 1600-1900 meters above sea level, ideal for the arabica varieties they grow.. When we were there in February 2024 the harvest was largely over but not finished. We will be back in autumn and are excited to here how the new season is progressing.
In their beneficio the cherries are processed, always as natural but with an impressive variety of well documented fermentation times and temperatures. As they also roast some of the green beans for local sales, they are able to optimize fermentation and roasting as a single process.
