It was a great pleasure listening to Don Roger Solis talking about his work and his beneficio. The mill processes around 500 fanegas annually from Catuai cherries harvested in his fincas. The highest finca is the Finca San Francisco located at 1900 meters above sea level.
Traditionally oriented, the mill offers both wet and dry processing. Drying is on patios and raised beds which can be covered if required. Hot air drying is however increasingly needed due to the unpredictable rainfall in the last few.years.

Exports for mainly to USA and Japan today, but I sincerely hope that Germany will soon appear on the list. The harvest will start soon – I will be back!
